1. Pork wet Fry – Yonies

Wet fry pork is one of the meals you definitely feel excited when preparing because your taste buds love meat products. Serve with ugali, rice or Mukimo.
Ingredients
500g Pork Cubed, 1 large onion (Finely chopped), 2 cloves of garlic grated, A bunch of coriander leaves, 2 royco cubes, 1 tsp of oil, 3 large tomatoes (peeled and chopped), and salt to taste
Instructions
1. Place the chopped pork in a Sufuria or saucepan and place on medium heat.
2. Add a teaspoonful of cooking oil and fry the meat until it turns golden brown. This is to get rid of any unpleasant taste brought by pork fat.
3. Drain the excess oil into a container leaving only a half teaspoonful.
4. Add the chopped onions and stir for 2 more minutes and then add in garlic and continue mixing for another 2 minutes.
5. Add the chopped tomatoes and stir in between until all the onions are crushed forming a thick sauce.
6. Sprinkle some salt and Royco cubes and if you like chilies, this is the time to add some.
7. Add a half Cupful of water and reduce heat. Let it simmer for about 5 minutes or until the meat is tender enough according to your liking. Turn off the heat and add coriander and mix. Cover for two minutes then serves while hot.
2. Pork rib

Ingredients
For the Pork
50g light brown soft sugar, 2 tbsp paprika, 2 tbsp English mustard powder, 1 tsp salt, 1 tsp garlic granules, 4 racks baby back pork ribs (about 450g each)
For the baste
250ml yellow mustard, 150ml cider vinegar, 2 tbsp sugar syrup, 75g light brown soft sugar, 2 tbsp ketchup sauce, 2 tbsp hot chilli sauce, 2 tsp hot chilli powder
Instruction
1. Pre-heat the Heat oven to 160C.
2. Combine the sugar, paprika, mustard powder, celery salt and garlic granules in a bowl, and rub all over the ribs. Place in 2 large roasting tins then set inside
3. Pour 150ml water into the bottom of each tin, cover tightly with foil and roast for 3 hrs until nearly falling apart. If your roasting tins are on different shelves, swap them over halfway through the cooking time. Once cooked, remove and drain the cooking liquid.
4. Meanwhile, to make the baste, mix all the ingredients in a saucepan and cook for 10 mins, stirring occasionally, until the sugar has dissolved. Set aside.
5. Heat an outdoor barbecue. Whether your grill is gas or charcoal, use low heat to barbecue the ribs. Cook the ribs for 3-4 mins each side, brushing regularly with the baste, until golden and sticky.
3. Air- Fryer Pork Shoulder Cubes- By Tamika Mwongeli

INGREDIENTS
1kg piece boneless pork belly, rinsed & patted dry, 1/2 tsp garlic powder, 1 tsp black pepper (to taste), 2 tsp sea salt flakes and Olive oil or Vegetable oil spray
INSTRUCTIONS
1. Preheat the Air Fryer at 400°F for 4 minutes.
2. Remove the skin from the pork belly, if needed. Cut the pork belly into 3/4” sized cubes and place in a bowl. Season with BBQ sauce, garlic powder, salt and black pepper. Spread the pork belly in even layer in air fryer basket.
3. Air Fry at 400°F for 10-18 minutes, shaking and flipping and the pork belly 2 times through cooking process (time depends on your preferred doneness, the thickness of the pork belly, size & cooking intensity of your air fryer).
4. Check the pork belly to see how well done it is cooked. If you want it more done, add an extra 2-5 minutes of cooking time.
5. Season with additional salt & pepper if desired. Drizzle with optional BBQ sauce if desired. Serve warm.
4.Stir Fry Pork Strips- by Mulunga Alukwe
This Stir Fry Pork strip is a True Kenyan delicacy. All you need is some white rice to enjoy this gorgeous dish

Ingredients
1kg Pork, 1 Onion, 1 Cup French Beans, 1 Red Bell Pepper, 1 Green Bell Pepper, 1 Yellow Bell Pepper, Salt to taste, 2 Tsp Ground Cloves, 2 Tsp Ground Cumin, 2 Carrots
Instructions
1.Add pork chopped into strips into dry pan. Allow to start cooking with its juices.
2. Regularly toss the pork to prevent the meat from sticking. Continue frying on medium heat. Then cover pan and let the pork fry
3. Stir fry the pork until golden brown in color. Add chopped French beans. Fry the French beans until crispy
4. Slice the onions thinly. Add them into the pork mix. Fry the onions until they are fragranced and soft. Thinly slice the carrots, add the carrot sticks into the pan and fry them until lightly crispy.
5. Add pinch salt, ground cloves, ground cumin, mix the ingredients well, fry few seconds
6. Chop the bell peppers into cubes add into the pork stir fry, cook several minutes on high heat for 5 minutes. Serve the stir fry pork as a side or main dish

Chopped Onion
1 Tbsp salt
Tbsp sugar
1 Tbsp paprika
A cup ketchup
2 cups beef stock/ water
INSTRUCTIONS
Preheat the oven to (200°C).
Peel off the tough membrane that covers the underside/bony side of the ribs. Place on a baking sheet or tray lined with foil (or parchment paper).
Sprinkle seasoning over ribs and drizzle with oil. Rub the BBQ seasoning all over the ribs on both sides. Cover tray with foil and broil (or grill) in oven at 200’C for 1 1/2 hours until ribs char and caramelise the edges or until tender to your liking.
Rest for 10 minutes to allow the juices to recirculate back into the meat before slicing.
