Making a Perfect Carrot Cake

Carrot cake is arguably one of the tastiest cakes that is easy to make.

When you want to make a carrot cake, consider having this:

  • vegetable oil, plus extra for the tin
  • natural yogurt
  • eggs
  • vanilla extract
  • orange, zested
  •  self-raising flour
  •  light muscovado sugar
  • ground cinnamon
  • fresh nutmeg, finely grated
  • carrots (about 3), great them
  • sultanas or raisins
  • walnuts or pecans, roughly chopped (optional)

For the icing

  • 100g slightly salted butter, softened
  • 300g icing sugar
  • 100g soft cheese

Carrot cake first originated from England. Most women used to prepare them for their husbands. It was a way of expressing love and they thought their husband would love it.

However, the carrot cake can be frosted or frozen.
