French Fry Omelete and Vegan Jalfrezi Fries

This Mombasa street food dish is a humble omelette consisting of chips (fries) and eggs. The combination of vegetables can vary, sometimes prepared with just chips and eggs, or the addition of aromatics. FRENCH FRY OMELET

Ingredients

1 medium onion (Thinly sliced), 1 medium tomato, 8 big potatoes (Peel and cut into 1/2-inch thick and 1/2-inch wide planks, 1 stem of fresh dhania fresh leaves and tender stems (Coarsely chopped), cooking oil for deep frying, 4 large eggs, 1/2 tsp mulsons  spices chili powder, Kosher salt, 2 tbsp unsalted butter

Garnish options: kachumbari (fresh onion and tomato salad mixed with Ketchup sauce)

 

Instructions

 

1.Add the oil to the frying pan and until the oil is shimmering then add the onion and cook until beginning to soften, 4 to 5 minutes.

  1. Add the tomatoes and cook for 3 to 5 minutes. Season with salt before transferring it to a medium bowl. Set the pan aside to use later, no need to wash.
  2. Add the dhania, eggs and chili powder, to the tomatoes. Add some salt and whisk to combine.
  3. Fill the frying pan with 2-inches oil and heat till hot. Pat the potatoes dry with a towel before frying the potatoes until tender and lightly golden brown, 5 to 7 minutes.
  4. Melt the unsalted butter in the frying pan over medium-low heat. Pour in the egg mixture and scramble until halfway cooked. Spread into an even layer.
  5. Add the fries in an even layer and press into the eggs. Gently shake the pan to keep the bottom from sticking.

7.Flip the pan and cook the other side until the bottom is set, 2 to 3 minutes more.

8.Serve with ketchup or topped with if kachumbari desired.

Season the French fries with freshly ground pepper and plenty of salt. The secret to this otherwise modest French fries omelet lies in its slightly runny, caramelized top, which turns into a masterpiece, as freshly grated parmesan forms a thin skin.

 

Jalfrezi Fries

HOT AND SPICY INDIAN INSPIRED MASALA FRIES.

These masala chips make for an amazing brunch or side dish for fries lovers. Make these flavour-packed masala chips with with onions, peppers and spices, then toss in freshly-cooked fries for a delicious meal.

Ingredients

500 g cooked French fries, 2 tbsp oil, 1 tsp cumin seeds, 4 large cloves garlic crushed, 1 tbsp Mulsons spice ginger powder, 1 tbsp tomato purée, 1 tsp Mulsons turmeric, 2 tsp Mulsons chilli powder, 1 tsp Mulsons garam masala, 1/2 tsp fennel seeds ground, 1 large onion, 1 red pepper, 1 green pepper, 300 ml water, 1 tsp salt, 1 tsp  dried fenugreek leaves and 2 tbsp fresh coriander, chopped to garnish

Vegan Jalfrezi Fries

1.Slice the peppers and onions into thin strips.

  1. Heat the oil in a large wok. Add cumin seeds and allow to sizzle for 15-20 seconds. Next, add the garlic and ginger. Sauté for about 10 seconds.
  2. Add the tomato purée and stir well. Cook for a minute to take the raw edge off the paste, then add the turmeric, chilli powder and garam masala . Mix and then add the water. Cook the mixture over a medium heat for 2-3 minutes, stirring all the time.
  3. Tip in the onions, peppers and add the salt. Stir fry over a high heat for 2 minutes, or until the veggies soften.
  4. Cook the fries according to packet instructions or recipe instructions. We cooked the frozen fries in the air fryer for this dish.
  5. Add the crispy fries to the hot Jalfrezi immediately before serving. Toss well. Sprinkle with fenugreek leaves and chopped coriander leaves. Serve at once.

FRIES WITH BACON

These are the ultimate cheese and bacon loaded fries. The crispy French fries are topped by two types of melted cheese, smoky bacon and fresh herbs. A hearty appetizer option that takes just minutes to put together and is always a big hit! This is definitely something you shouldn’t be eating every day, but sometimes you just need to give in to those junk food cravings, and this could be the ultimate munchies dish!

Ingredients

900 g frozen french fries, 2 cups shredded cheddar cheese, 1 cup shredded mozzarella cheese, 3/4 cup bacon cooked and crumbled, 1/4 cup green onions sliced, 2 tbs parsley chopped and 1 cup ranch dressing

 

Instructions

1.Preheat the Nutricook  air fryer to 380 degrees and spray the basket with nonstick spray.

  1. Cut the potato in half lengthwise, then into 1/4-inch slices. Cut the slices into 1/4-inch sticks. Put the fries in a medium bowl and rinse them well with cold water, then drain and pat dry with paper towels.
  2. Toss the fries with the oil in a medium bowl, then sprinkle with 1/2 teaspoon salt and several grinds of Mulsons pepper.
  3. Working in batches if necessary, put the fries in an even layer in the air fryer basket with no overlapping and cook, turning them halfway through, until golden brown and crisp, 10 to 16 minutes. Remove and season with salt.
  4. Sprinkle the cheeses over the fries and cook until cheese is melted.
  5. Sprinkle the bacon, green onions and parsley over the fries.
  6. Serve immediately with ranch dressing on the side, or alternatively you can drizzle the ranch over the fries.
