8 large (28g) sea scallops, cleaned and patted very dry, 1/4 tsp ground pepper, 1/8 tsp salt, Halisi Cooking oil, 60ml extra-virgin olive oil, 2 tbsp very finely chopped flat-leaf parsley, 2 tsp very finely chopped capers, 1 tsp finely grated lemon zest, 1/2 tsp finely chopped garlic

- Sprinkle the scallops with ground pepper and salt, ensuring both sides are well-seasoned.
- Coat the basket of your air fryer with Halisi Cooking oil. Place the seasoned scallops in the basket and give them a light coating of cooking oil as well. This will help achieve a beautiful sear and prevent sticking.
