Lemon-Herb Scallops

Ingredients

8 large (28g) sea scallops, cleaned and patted very dry, 1/4 tsp ground pepper, 1/8 tsp salt, Halisi Cooking oil, 60ml extra-virgin olive oil, 2 tbsp very finely chopped flat-leaf parsley, 2 tsp very finely chopped capers, 1 tsp finely grated lemon zest, 1/2 tsp finely chopped garlic

Instructions

  1. Sprinkle the scallops with ground pepper and salt, ensuring both sides are well-seasoned.
  2. Coat the basket of your air fryer with Halisi Cooking oil. Place the seasoned scallops in the basket and give them a light coating of cooking oil as well. This will help achieve a beautiful sear and prevent sticking.
  3. Set the air fryer to 400°F (200°C) and cook the scallops until they reach an internal temperature of 120°F (49°C). This should take approximately 6 minutes, depending on the thickness of each scallop. Remember, the scallops may not brown in the air fryer, so focus on the internal temperature for doneness.
  4. While the scallops cook, prepare the delectable lemon-herb sauce. In a small bowl, combine the extra-virgin olive oil, very finely chopped flat-leaf parsley, very finely chopped capers, finely grated lemon zest, and finely chopped garlic. Mix everything together until well-combined.
  5. Once the scallops are cooked to perfection, remove them from the air fryer and transfer them to a serving platter and drizzle the lemon-herb sauce over the scallops, ensuring each one is coated with the flavorful goodness.

 

Chef’s Tip:

Once the scallops are in the air fryer give them a light coating of Halisi cooking oil as well to help achieve a beautiful sear and prevent sticking.

To ensure the scallops are cooked perfectly, use an instant-read meat thermometer to check their internal temperature. Aim for 120°F (49°C) for tender, succulent scallops.
