Fried Omena x Ugali

Lemon – Garlic Omena x Ugali

2 cups of washed Omena

2 large tomatoes, sliced

1 large onion, sliced

3 cloves- minced garlic

1/2 Red chilli, chopped

Salt to taste

2 tablespoons Vegetable oil


Select the omena to remove loose scales and dirt. Put the omena in a bowl and soak them in hot water with salt, cover it with a dish cloth and let it sit for 30 minutes or until the water has cooled. Once cooled, strain the omena and rinse them in cold water.

Place your sufuria over medium heat and add the omena. stir till it turns golden brown and becomes crunchy to remove the excess water

In a separate sufuria add your oil and add your onions and let it cook till it becomes soft.

Add tomatoes and a pinch of salt. Cover and let it cook till it’s all saucy making a thick paste in the mixture then add your omena and keep stirring. Add garlic. Stir.

Let it cook for about 2 minutes without stirring. Add chilli and let it cook for about 4 more minutes till it’s almost dry.

Add your squeezed lemon juice as you stir for 30 seconds

Serve hot with ugali.
